What are organic Aduki beans?

Aduki beans are small, reddish-brown beans with a distinctive white stripe on their skin. They are slightly smaller than kidney beans and stand out immediately due to their naturally sweet, nutty flavor. This makes them unique among legumes: suitable for both savory and sweet dishes.

In Japan and China, they have been eaten for centuries, traditionally processed into red bean paste for desserts such as mochi and dorayaki. In Western cuisine, they are becoming increasingly popular in curries, salads, bowls, and stews.

Unlike canned beans, they contain no salt or preservatives. You prepare them exactly as you like.

Why organic? Grown without pesticides, richer in flavor, and better for the soil. That's why we only offer organic products.

What do you use them for?

Adzuki beans are more versatile than most other beans. They work excellent in savory dishes such as curries, stir-fries, soups, and salads. But they are also a classic in sweet applications such as red bean paste, brownie mix, or as a base for mochi.

Additionally, they are suitable for sprouting. Within three to four days, you'll have crunchy, protein-rich sprouts that you can use raw in salads or on bread.

Preparation

For the best results, it is advisable to soak adzuki beans beforehand. Ideally, start the night before.

  1. Rinse the beans thoroughly with cold water
  2. Place them in a large pot and add four times the amount of water
  3. Let them soak for at least eight hours at room temperature
  4. Drain the soaking water and use fresh water for cooking
  5. Cook the beans for thirty-five to forty-five minutes over low heat
  6. Only add salt at the end

Tip: Do you want to make red bean paste? Cook them a little longer until they are completely soft and mash them with a little sugar and a pinch of salt.

Sprouting

Aduki beans are also excellent for sprouting.

  1. Soak overnight in plenty of water
  2. Drain and place in a sprouting jar or colander
  3. Rinse twice a day with cold water
  4. After three to four days, the sprouts are ready to eat

The sprouts are delicious raw in salads, on bread, or as a topping on a bowl.

Storage

Store dried aduki beans in a tightly sealed jar or bag in a cool, dry, and dark place. They will keep for up to two years. Store sprouted beans in the refrigerator and use them within two days.
