What are marrowfat peas
Marrowfat peas, also known as field peas or grey peas, belong to the legume family and are closely related to capuchin peas. They have a grey-green to brown color and a full, earthy taste. After cooking, they get a creamy texture with a firm bite.
This ancient Dutch pea was formerly widely eaten in traditional regional dishes, but is now regaining popularity due to its nutritious properties. Marrowfat peas are rich in fiber, vegetable proteins, and minerals, making them an excellent meat substitute.
Preparation
Marrowfat peas are easy to prepare but require some preparation.
-
Rinse the peas thoroughly with cold water.
-
Put them in a large pan and add three times as much water.
-
Let the peas soak for 8 to 12 hours at room temperature.
-
Use the soaking water as cooking water for extra flavor.
-
Cook the peas until tender in 60 to 75 minutes.
They are delicious in savory dishes, such as stews or old-fashioned 'kapucijners met spek en augurk'.
Storage
Dried marrowfat peas have a long shelf life. Store them in a well-sealed jar or bag in a cool, dry, and dark place. This way, they will remain good for up to a year and retain their flavor and nutritional value.
