What are soybeans?
Soybeans are one of the most nutritious legumes in the world and have been used in Asian cuisine for centuries. They are packed with plant-based proteins, fiber, calcium, magnesium, and unsaturated fatty acids — and contain all essential amino acids. This makes them one of the few plant-based protein sources that are nutritionally fully comparable to animal proteins.
Preparation method
Soybeans require a little more preparation than other legumes, but it is definitely worth it:
- Rinse the beans thoroughly under cold water.
- Soak them for 12 to 18 hours in plenty of cold water (about three times as much water as beans).
- Drain the soaking water and cook the beans in fresh water.
- Cook the beans for 2.5 to 3 hours over low heat until tender.
Please note: only add salt at the end of the cooking time; this ensures better tenderness.
Storage
Dried soybeans have a long shelf life. Store them in a cool, dry, and dark place, and they will keep for up to a year. After this period, the beans will still be perfectly edible, but they may require some extra soaking and cooking time.
