What are Black Eyed Beans?

The Black Eyed Bean is recognizable by its characteristic black "eye" in the middle of the bean. Originally from Africa, these beans are now eaten worldwide – from North and South America to the Caribbean. In the Netherlands, too, the bean is gaining more and more fans.

The beans hold their shape well during cooking and have a soft, slightly sweet and earthy taste. This makes them very suitable for use in salads, rice dishes, stews and more.

Preparation method

Like other legumes, black eyed beans must first be soaked before use:

  • Rinse the beans well.
  • Soak them for 8 to 12 hours in cold water (or 3 hours in warm water).
  • Then cook the beans for 40 to 60 minutes until they are tender.

Storage

Dried Black Eyed Beans have a long shelf life. Store them in a cool, dry and dark place, and they will keep for up to a year. After this time, the skin may become a little harder, but the beans are still perfectly edible; they will just need some extra soaking and cooking time.
