What are black beans
Black beans, also known as black turtle beans, are widely used in South American cuisine. They are similar to pinto beans in preparation but are slightly smaller in size and have a deep black color.
The beans have a firm, almost meaty texture with a mild, earthy taste reminiscent of mushrooms. This makes black beans particularly suitable as a meat substitute in vegetarian and vegan dishes.
Preparation
For black beans from a new harvest, soaking is usually not necessary. If the beans are a bit older, it is advisable to soak them beforehand. Ideally, start preparations the evening before cooking.

Rinse the beans thoroughly with cold water.

Place them in a large pot and add three times as much water.

Let them soak for at least twelve hours at room temperature.

Use the soaking water as cooking water for extra flavor.

Cook the beans until tender, about sixty to ninety minutes.
Storage
Dried black beans have a long shelf life. Store them in a well-sealed jar or bag in a cool, dry, and dark place. They will keep for up to a year. After that, the skins may become a bit harder. The beans will still be perfectly usable, but will require a longer soaking and cooking time.
