What are organic chickpeas?

Chickpeas are round, golden-yellow legumes with a mild, slightly sweet, and nutty flavor. They have been cultivated for over 8000 years and are part of traditional cuisines from the Middle East to India. In the Netherlands, they are becoming increasingly popular, and for good reason. They are versatile, nutritious, and suitable for dozens of dishes.

Our organic chickpeas are dried and without additives. This makes them firmer in texture than canned chickpeas, ensuring they retain their bite even in stews and on the baking sheet.

Unlike canned chickpeas, they contain no salt or preservatives. You prepare them exactly as you like.

Why organic? Grown without pesticides, richer in flavor, and better for the soil. That's why we only offer organic products.

What do you use them for?

Chickpeas are the most versatile legume. They are the main ingredient of hummus and falafel, but work just as well in Indian curries, Moroccan tagines, Mediterranean salads, and casseroles. Want something different? Roast them until crispy in the oven with olive oil and spices for a healthy snack.

A special advantage of cooking them yourself: the cooking liquid, also known as aquafaba, is an excellent vegan substitute for egg white. Usable in mousse, baked goods, and meringue.

Preparation

For chickpeas from a recent harvest, soaking is not always necessary, but for the best result, we always recommend it. Ideally, start the evening before.

  1. Rinse the chickpeas well with cold water
  2. Put them in a large pot and add three times as much water
  3. Let them soak for eight to twelve hours at room temperature
  4. Drain the soaking water and use fresh water for cooking
  5. Cook the chickpeas for forty-five to sixty minutes until done for use in salads and curry
  6. For hummus or falafel, cook them a little longer, ninety minutes, until completely soft

Tip: save the cooking liquid. This aquafaba can be used as a vegan egg substitute.

Storage

Store dried chickpeas in a well-sealed jar or bag in a cool, dry, and dark place. They will keep for up to a year. Avoid moisture, light, and heat to maintain quality.
