What are Frisian forest beans?
The Frisian forest bean, also known as Wâldbeantsje in Frisian, is a yellow bean that turns light brown after cooking. Its taste is similar to that of the brown bean, but with a slightly softer and more refined flavor.
Thanks to their mild flavor, Frisian forest beans are versatile. They are delicious in soups, but also excellent in salads and bean dishes.
Preparation
Rinse the beans thoroughly.
Soak them for at least 12 hours in cold water, using three times as much water as beans.
Use the soaking water as cooking water for extra flavor.
Cook the beans for approximately 60 minutes until tender.
Storage
Dried Frisian forest beans have a long shelf life. Store them in a cool, dry, and dark place, and they will keep for up to a year. After this period, the skin may become a bit harder, but the beans remain perfectly edible. Please note that they may require slightly longer soaking and cooking times then.
