What are white beans?
White beans are small, kidney-shaped legumes originally from South America. Nowadays, they are very popular in the Netherlands too, and not without reason. They have a creamy taste reminiscent of brown beans, but maintain a firmer texture during cooking. This makes them ideal for both hot and cold dishes.
Preparation
Soaking is often not necessary for white beans from a recent harvest. If the beans are older, it is advisable to soak them beforehand for a better cooking result.

Rinse the beans thoroughly with cold water.

Put them in a large pot and add three times as much water.

Let them soak for at least twelve hours at room temperature.

Use the soaking water as cooking water for extra flavor.

Cook the beans for about eighty minutes until done.
Serving tips
White beans are delicious in bean soup, tuna salads with red onion, or a classic English breakfast. Serve them, for example, in tomato sauce with toast, bacon, sausage, and grilled tomato. For a surprising twist, you can also briefly roast the cooked beans for a nutritious and tasty snack.
Storage
Dried white beans have a long shelf life when stored properly. Store them in a tightly sealed jar or bag in a cool, dry, and dark place. This way, they will remain good for up to a year and retain their flavor and quality.
