What are French mountain lentils?

French mountain lentils are round, flat seeds from the legume family (Fabaceae). Although lentils originally come from the Middle East, these specific lentils are grown in France. They are nutritious, low in fat, and rich in plant-based proteins, vitamin B, and essential minerals. Their slightly spicy, nutty flavor and firm bite make them popular in many cuisines.

Preparation

Unlike many other legumes, French mountain lentils do not need to be soaked. If you prefer to soak them, one to two hours in cold water is sufficient.

Note that lentils expand during cooking. Fifty grams of dry lentils yields approximately one hundred grams of cooked lentils. Use a large pot with at least three times as much water as lentils and cook them for about fifty minutes until tender.

Storage

French mountain lentils have a long shelf life. Store them in a well-sealed jar or bag in a cool, dry, and dark place. Under the right conditions, they can last up to a year. This way, you always have a nutritious ingredient on hand.
