What is chickpea flour?
Chickpea flour is exactly what the name says: dried chickpeas ground into a fine flour. You may also know it as gram flour, chickpea flour or besan. It is high in plant-based protein and fibre, and chickpeas are naturally gluten-free.
What do you use it for?
- Socca and farinata: thin flatbreads from Southern France and Italy, made from nothing more than flour, water and olive oil
- Batter: for pakoras, onion bhajis and vegetable tempura
- Thickening: in soups, sauces, burgers and meatballs
- Egg substitute: 3 tablespoons of flour with 3 tablespoons of water replaces 1 egg
- Baking: replace up to half the flour in bread, pancakes or muffins
Tip: roast the flour for a few minutes in a dry frying pan for a deeper, nuttier flavour.
Note: always heat thoroughly
Do not eat chickpea flour raw. Like whole chickpeas, it contains substances that are only broken down by heating. Baking, cooking or frying is sufficient.
Storage
Store in a well-sealed bag or container in a dry, cool, dark place. Flour has a shorter shelf life than whole pulses. Use within [X months, supplier best before date]. Once opened, it will keep best in the refrigerator.
Frequently asked questions
Is chickpea flour the same as besan?
Almost. Besan is traditionally made in India from small split chickpeas. They can be used interchangeably in recipes.
Can I replace flour with chickpea flour one-to-one?
Not entirely. The flour binds differently and has its own flavour. Replace up to half the flour for the best results.
Can I add it to my smoothie?
No, not raw. Always heat the flour first.
