What are red beans

Red beans, also known as kidney beans, owe their name to their kidney-shaped appearance and deep red color. These versatile beans are suitable for both hot and cold dishes, such as chili con carne, bean salads, and vegetarian burgers.

With their firm texture and nutritious properties, red beans are an excellent meat substitute. Approximately seventy grams of beans is equivalent to one serving of meat.

Preparation

For red beans from a recent harvest, soaking is usually not necessary. If the beans are a bit older, soaking is recommended for a better cooking result.

  1. Rinse the beans well with cold water.

  2. Place them in a large pot and add three times as much water.

  3. Let the beans soak for at least eight hours at room temperature.

  4. Use the soaking water as cooking water for extra flavor.

  5. Cook the beans until tender in one to two hours, depending on their age and size.

After that, they are ready to be used in soups, stews, or vegetarian dishes.

Storage

Dried red beans have a long shelf life if stored properly. Store them in an airtight jar or bag in a cool, dry, and dark place. Avoid moisture, light, and heat to maintain quality. This way, the beans will remain in top condition for months.
